Bedeau and Bitotes, The Masterpieces

As you may already well know, "Bedeau" and "Bigotes" are not only Frederic Cossard's signature cuvée but also an absolute masterpiece of natural wine. Nowadays, it is common to see natural wines adorned with pop, comic-style illustrated labels, but it was actually Frederic Cossard who pioneered this trend—and he did so right in the heart of Burgundy. Its inaugural vintage was 2000.

This one cuts in from an unexpected angle, breaks through, and lingers beautifully. At first, the acidity bursts forth and catches you off guard, but soon the liquid comes together, gaining harmony and smoothness. In Japan, refined Burgundy wines are sometimes described with terms like “dashi-kei” (broth-like) or “tanshi-kei or awauma-kei” (delicately savory) — and this wine is exactly that.

Pinot Noir Vieilles Vignes (over 50 years old) from the Puligny and Nuits-Saint-Georges areas. Whole-bunch fermentation, élevage in egg-shaped concrete and stainless steel tanks.
