Domaine de la Cras - Marc Soyard
In 2013, the city of Dijon purchased 160 hectares of land with a winery facility called Domaine de la Cras, which included 5 hectares of Pinot Noir and 3 hectares of Chardonnay vineyards classified as Bourgogne AOC. The vineyards have expanded little by little, reaching 11 hectares in total by 2018.
Domaine de la Cras appointed a talented young winemaker, Marc Soyard, as head winemaker and estate manager starting with the 2014 vintage. Marc gained experience at Domaine Bizot in Vosne-Romanée as a vineyard manager and worked closely with Jean-Yves Bizot for six years. He brought Bizot's simple, natural style to Domaine de la Cras. He farms the vineyards organically and biodynamically, and the winemaking uses native yeasts with little to no sulfur dioxide (SO2).
