Marc is a traditional French spirit, broadly comparable to what is known in Italy as grappa. After pressing the wine, the grape skins still retain concentrated aromatic compounds and flavour. These are further fermented and then distilled to increase the alcohol level, resulting in a richly aromatic spirit.

Those aged in barrel take on an amber hue, while unaged versions remain clear. Gérard Schueller deliberately avoids barrel aging in order to express the grape’s natural aromatics, producing a transparent style.

In Alsace, it is referred to as Marc d’Alsace, while in Burgundy it is known as Marc de Bourgogne.
