The popular Pet-Nat La Chassornade 2023 has arrived, marking the return of the crown cap. Made from Burgundy Aligoté, it undergoes primary fermentation in stainless steel tanks, followed by secondary fermentation in the bottle on the lees. Crafted with no cultured yeast added, zero SO2, and unfiltered. Fine, smooth bubbles at over 4 atmospheres blend with rich fruit notes—lemon, grapefruit, white peach, a hint of herbs, and minerality—creating a beautiful cloudiness and a truly distinctive flavor.

By the way, 'Chassornade' is a word coined by Frédéric Cossard, combining 'Chassorney' and 'Lemonade'. As the name suggests, he wanted to make a Pet-Nat that drinks like lemonade! It retains its beautiful cloudiness because it is released without disgorgement.
