Sébastien Riffault cultivates his 12-hectare vineyards biodynamically, and his vinification is completely free from SO2 and any other chemical inputs.

Sébastien expresses a highly unique style. In fact, one could say this is the original style of Sancerre; Sébastien has precisely revived the Sancerre of a century ago. These wines are made from perfectly mature grapes harvested from old vines, consistently featuring a significant amount of botrytis. They are aged in old barrels for an extended period and bottled without fining or filtration.

While its taste defies the standards of modern Sancerre, the wine possesses an impressive natural concentration and ripe fruit profile. It is easy to see why these wines are so highly sought-after by natural wine bars in Paris and creative, fine-dining restaurants around the world.
