Bedeau and Bitotes, The Masterpieces

As you may already well know, "Bedeau" and "Bigotes" are not only Frederic Cossard's signature cuvée but also an absolute masterpiece of natural wine. Nowadays, it is common to see natural wines adorned with pop, comic-style illustrated labels, but it was actually Frederic Cossard who pioneered this trend—and he did so right in the heart of Burgundy. Its inaugural vintage was 2000.

Qvevris

A monumental shift followed with the 2018 vintage and the introduction of Qvevris. Seeking a pure expression of fruit and terroir, Cossard concluded that oak masked the wine's natural purity. He integrated Georgian Qvevris partially starting in 2018, added cement and steel vessels, and by 2020 completely eliminated wooden barrels from his cellar—an extraordinary move for a producer working with Burgundy's finest classic appellations, such as Vosne-Romanée, Chambolle-Musigny, and Puligny-Montrachet.

2019 Bedeau Qvevris

Following the 2018 vintage—which marked the debut of their Qvevri program—the 2019 vintage also exists in two versions: barrel-aged and Qvevri-aged. As one would naturally expect from Burgundian fine wine, the 2019 Qvevri emerged with a personality completely distinct from the 2018. As you know, both vintages are recognized as legendary years for Burgundy. For the 2019, we were equally curious to see how it would evolve with time; furthermore, because it initially showed a tighter, firmer structure, we decided to keep it resting in the Beaune cellar until now.

While the 2018 is sitting at about 90% potential, the 2019 has reached a full 100%—meaning it is safe to say it has hit its absolute peak. It has the elegant character of a classically aged Burgundy. The texture is seamless, with aromas drifting softly above a deeply concentrated core of pure fruit extract. The fact that its delicate nuances are displayed with such crystal clarity is, once again, perhaps because there is no oak influence to get in the way.
