60% Pinot Noir and 40% Pinot Meunier sourced from selected plots in Fossoy (Base: 2020 harvest). Fermented and aged on the lees in 228L oak barrels (crafted from wood from the Fossoy forest) for 10 months. Zero Dosage. Dégorgement: 19th December 2022.
Benoît Déhu represents the 8th generation of a historic winegrowing family in the Vallée de la Marne’s village of Fossoy. Practicing strict biodynamics, he is a master of barrel fermentation and aging, even crafting his own oak casks from trees grown in his family’s forest right next to the vines.
Initiation Rosé is a cuvée that masterfully combines Pinot Meunier from his iconic La Rue des Noyers plot with Pinot Noir from selected clay and sandy soils—notably featuring a higher proportion of Pinot Noir than its Blanc counterpart. The nose is charming and lovely, filled with vibrant notes of strawberry and raspberry, while the palate reveals an unexpected, impressive volume. This expression is also crafted as a Brut Nature, made with a minimalist approach: no malolactic fermentation, no filtration, and zero dosage.
