Benoît Déhu represents the 8th generation of a historic winegrowing family in the Vallée de la Marne’s village of Fossoy. Practicing strict biodynamics, he is a master of barrel fermentation and aging, even crafting his own oak casks from trees grown in his family’s forest right next to the vines.
Initiation seamlessly blends Pinot Meunier from his iconic La Rue des Noyers plot with Pinot Noir from select clay and sandy soils. This cuvée boasts remarkable purity, weaving fine, precise citrus acidity with delicate notes of quince. Though elegant and refined on the palate, it delivers unexpected depth backed by a supple yet commanding structure. True to his minimalist approach, this Brut Nature champagne is made with no malolactic fermentation, no filtration, and zero dosage.
