It is the closest parcel to the border with Hautes Côtes de Nuits but still on the side of Hautes Côtes de Beaune. It is surrounded by pastures and far away from the neighboring parcels. This isolation, just as with “Les Chagniots,” is beneficial, especially against powdery mildew pressure, and the parcel stays healthy with minimal spraying. Given its high altitude of 470 meters, it is the last parcel we pick. This also explains its freshness and tension.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eThe farming is comparable to our other Hautes Côtes parcels.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eThe Wine - The long hang time and late picking renders this wine’s poise and class. Nose : very citrusy with yellow fruit. Palate : elegant and harmonious. Beautiful “matière” supported by the acidity. One of our favorite Aligotés of the vintage. Otherwise there’s no other heavy mechanic intervention. This all contributes to limiting soil compaction. As far as the rest of the farming goes, it’s comparable to that applied in “Les Chagniots”. We farm organically, using phytotherapy approaches researched and recommended by Eric Petiot. As far as spraying goes, minimal copper is used against downy mildew and low-fat milk against powdery mildew, with zero sulfur use. The vineyard is plowed by horse by Gilbert Simond. The soil is tilled from mid-April to mid-July only, with no tilling for the other 8 months of the year.\u003cbr\u003e\u003cbr\u003eThe Wine - Carbonic maceration with whole bunches for a week before pressing, with no added sulfur until July 2021. Nose: intense with ripe yellow fruit. Palate: complex, salty, mineral. Aromas of ripe pear.
