To maintain soil softness and protect the delicate microbial ecosystem, this parcel is also plowed by horse.\u003c\/p\u003e\n\u003cp\u003eIn line with his other cuvées, the fruit is late-harvested at a ratio of 50% fully ripe grapes and 50% botrytized fruit. Yields are restricted to 20 hl\/ha—well under Sancerre’s standard allowance of 65 hl\/ha (with a maximum of 75 hl\/ha)—beautifully concentrating the core extract.\u003c\/p\u003e\n\u003cp\u003eIf Auksinis is defined by richness, and Sauletas by structure, then Skeveldra can be best described as complexity. Sébastien intentionally embraces an oxidative style, masterfully weaving together the flint-driven mineral tension and the intricate layers of botrytis.\u003c\/p\u003e\n\u003cp\u003eFermentation is carried out exclusively with native yeasts and zero added sulfur. The wine is fermented and aged in stainless steel tanks for 24 months, then transferred to old oak barrels for an additional 12 months of maturation on the lees (sur lie). Following this patient 36-month (3-year) journey, it is bottled unfiltered and with no SO2 added.\u003c\/p\u003e\n\u003cp\u003eDepending on the vintage, the wine shows an amber or pale orange hue. Intense aromas of quince, osmanthus, orange peel, and compote interlock with the distinct, smoky flint characters of the silex soil. On the palate, a savory wave of ripe apple-like flavor expands, yet a vibrant acidity and intense minerality provide a multi-dimensional structure.
