This sparked a strong desire among local brewers to produce premium Ginjo-shu using 100% locally grown rice. When the sake and the glass complement each other perfectly, it feels like a wonderful little discovery. Usually, the goal is to enhance the aroma. However, this is actually quite challenging; simply drinking any sake from a wine glass does not automatically improve the aroma. In fact, it often makes the alcohol feel too sharp or disrupts the balance between taste and aroma.

To begin with, sake is not brewed with the expectation of being drunk from a wine glass, and brewing sake specifically for that purpose gets the priorities backward. However, Gohyakumangoku is not suitable for high degrees of polishing, making it less than ideal for Ginjo-shu. This sparked a strong desire among local brewers to produce premium Ginjo-shu using 100% locally grown rice. Consequently, in the mid-1990s, the Niigata Prefectural Agricultural Research Center began developing a new variety of sake rice designed to surpass Yamada-Nishiki.

A vast number of crossbred varieties were cultivated in small quantities, promptly brewed into sake at the prefectural brewing research station, and evaluated for selection. Among them, one specific lineage consistently stood out and survived the rigorous selection process, eventually becoming known as “Sake No. 72.” This variety was a cross between Yamada-Nishiki as the maternal parent and Gohyakumangoku as the paternal parent.

Test cultivation of Sake No. 72 started in 2001. As a result, it poses some agricultural challenges, such as tall stalks that are prone to lodging (falling over). However, it is well-suited to Niigata’s cold climate, produces large grains, and boasts excellent sake-brewing qualities that withstand the high polishing ratios required for Daiginjo-shu. With its low protein content, Koshi-Tanrei is optimal for crafting Ginjo and Daiginjo sakes, delivering a soft, full-bodied flavor profile. The most fascinating part about Pinot Blanc is its genetic background. Pinot Noir is genetically highly unstable and prone to mutation. When Pinot Noir (black) loses its pigment, it becomes Pinot Gris (grey), and a further loss of pigment leads to the final mutation: Pinot Blanc (white).

Because the grapes look so much like Chardonnay, it seems they were often confused and cultivated as Chardonnay in many vineyards around the world until around the 1980s. Believed to have originated around Lake Geneva, it is also cultivated in the Savoie and Alsace regions of France. In Alsace, it seems that Chasselas is almost always used for blending in Edelzwicker, which suggests that a single-varietal Chasselas cuvée might be a true rarity. Frankly speaking, this was our very first time coming across one as well. Since we don't remember ever really drinking a Swiss Chasselas by the bottle either, we don't have much to say about the variety itself, but we can certainly introduce it from the perspective of being one of Bruno Schueller's wines.

The defining characteristic of Chasselas is its neutral and gentle flavor profile. The variety itself possesses very little distinctive aroma or flavor, and because of this, it is known as a grape that faithfully reflects the unique character of its terroir. It is probably worlds apart from what people expect from a Chasselas. What struck us as slightly different from Schueller’s other wines, however, was the impressive, gentle sweetness of the fruit. As time passes, the fruity and floral elements develop even greater depth and breadth. Since this is a 2017 vintage, it has aged for nearly a decade—a magnificent finish that delivers a sense of fulfillment, almost at its absolute peak. It takes time to mature and is vulnerable to diseases and pests, so it is difficult to cultivate. However, for sake producers, it is easy to handle and considered the ideal rice. It is well-suited for high polishing rates, meaning it is perfect for making Ginjo type. Since the appearance of Yamada-Nishiki, sake brewed with this rice has come to dominate the top ranks in the National New Sake Appraisal. In the mid-80s (the late Showa period), among sake brewers, a phrase called “YK35” became popular, meaning that using Yamada-Nishiki (Y) as the sake rice, Kyokai No. 9 yeast, also known as Kumamoto yeast (K), and polishing the rice to 35% or less would result in excellent appraisal scores.

Because of this, competition for high quality intensified especially at the top tier, leading to the creation of many renowned sake brands. Even so, we try our best to understand by coming up with creative approaches, such as vertical or horizontal tastings.

In that regard, a vineyard like Mainbey is a rare case, as it is planted with both Chardonnay and Aligoté and yields both as serious, fine wines. On that point, Chanterêves’s Mainbey and Les Monts de Fussey each offer two different white wines, making it much easier to spot the commonalities and contrasts.

2023 Mainbey – Aligoté

There is more to the story regarding the 2023 vintage. The Mainbey that arrived this time is a special version called “Élevage Prolongé,” which spent a full 22 months in barrel aging (compared to the usual 12 months or so). The label design is also slightly different. Among the Aligoté Lieux-Dits Series, Mainbey is a cuvée defined by its striking acidity and minerality. Right after release, some might find it a bit sharp or edgy. However, thanks to the extended aging period, this version feels beautifully integrated, transforming that initial sharpness into a sleek, glossy elegance.
